Born in Chicago, raised in Hawaii and San Francisco, and now based in Orange County, California, Vanessa grew up on the move. Instilled with a passion for cooking, whenever she moved locations, her beloved stockpile of ingredients followed.
Wherever she went, Vanessa would scour the city for dishes exclusive to that region. Then she would hit the local market, procure the ingredients, and perfect those recipes at home. Not one to be content with mere imitation, Vanessa would then intermingle those new recipes with the ones from her previous homes – thereby creating unique, mouth-watering and mind-blowing combinations of flavors the world has never tasted before!
When Vanessa discovered international travel, the entire world’s ingredients came within reach. Her process remains the same, but now operates on a global scale: she travels country-to-country, scouring markets for exotic flavors to bring back to California and incorporate into her dishes.
Vanessa thoughtfully and meticulously blends flavors and ingredients from around the world, creating remarkable dishes that taste both fresh and new, yet familiar and comforting. Magic!

Chef Vanessa Nhu will be presenting recipes that celebrate her passion for SoCal / Asian cuisine. Guests are encouraged to visit with Vanessa as she prepares her dishes in Stage & Table’s open kitchen. At the bar, the co-founders of Nanaki Shochu present their classic, award-winning Nanaki Shochu + their new Nankai Gold.

We cater a variety of events, from office parties to holiday dinners to birthday parties. We can accommodate any of your needs -- unless you're a canteen in an aircraft carrier. We saw that episode on the Discovery Channel and boy, does it look haaaaard. I mean, 4000 gallons of Split Pea Soup? Where do you even find the cauldron for that?
